What better way to celebrate the Truffle season than with an evening of pure indulgence? Owner and Executive Chef Brent Savage lends his love of native ingredients to an evening celebrating Australian Truffles in all their glory.

The menu will showcase the Australian Black Winter Truffle, with wines matched and selected by Nick Hildebrandt from Bentley Restaurant + Bar’s new wine list.

Often referred to as “black diamonds”, these beauties are brought to us by David Coomer from Coomer Truffles in WA. Coomer Truffles are sourced from the picturesque cool climate of the southern forest region of Manjimup, 295 km south of Perth, which is renowned for producing Australia’s finest black Perigord truffles.

Chef Francisco Javiar Araya will join Chef Lino Sauro in the Rum Stores at Kensington St, Chippendale to create an memorable evening.

Chef Francisco Javiar Araya is an innovative and progressive Chef with extensive experience at the world’s best restaurants in Chile, Spain and Tokyo.  Francisco’s foundation for avant-garde cuisine was developed when he spent a season at the legendary elBulli, under the direction of the renowned Ferran Adrià.  In 2012, he joined two fellow elBulli alumni to open 81 Restaurant in Tokyo where seasonal Japanese ingredients. His recent venture.

Araya, like chef Lino Sauro, is a proponent of ethically sourced and sustainable produce, ensuring that his exceptional produce is also environmentally friendly.  The degustation will be paired with Printhie Wines. a 5-Star rated winery from the high-altitude, cool-climate Orange region of NSW.

Bert’s Bar and Brasserie is reminiscent of the grand hotel dining rooms of the 1930’s, with the relaxed air of Sydney’s northern beaches. Join the team of Bert’s for a 4-course wine evening with wines matched by Bruce Tyrell.

Tyrrell’s is one of the most renowned names in Australian wine. Established by English immigrant Edward Tyrrell in 1858, the company is still proudly family owned. Led by fourth generation winemaker Bruce Tyrrell – with help from fifth generation members – the iconic winery lies in the shadows of the Brokenback Range. Bruce Tyrrell is fiercely proud of his Hunter Valley home and is unwavering in his passion for the family business. In 2006, he was recognised with an Order of Australia Medal for his contribution to Australian wine. Then in 2010, James Halliday’s Australian Wine Companion named Tyrrell’s “Winery of the Year”.

Danielle Alvarez from Fred’s – combines her Cuban heritage, fine-dining training, and years at the iconic Chez Panisse, to create a dining experience that is delicious, casual and truly produce-driven. Be inspired by her combinations of fabulous fresh seafood and beautiful seasonal vegetables at this hands-on lunch class, co-hosted with her fresh produce supplier, Julian Parisi.

Danielle Alvarez was born in Miami to Cuban-refugees, so it’s not surprising that the kitchen, and the camaraderie of the shared table, were focal points of her young life.

After school she studied art and set out to work in that field … but found herself living for her spare time spent cooking, and finally decided to follow her passion.

Tasmanian Whisky Weekend – 10 – 11th August 2018
This weekend for Whisky lovers, will have you visit some of Tasmania’s unique whisky distilleries by day and stay at Ratho Farm, Bothwell, in one of the property’s lovingly restored farm buildings that provide boutique accommodation.  Enjoy home cooked dinners prepared by your host and property owner Greg Ramsay, whisky tastings and fortified wines.

Enjoy a round of golf on Ratho’s course, the oldest in Australia, or relax on the banks of the Clyde River.

Beginning on Saturday morning, you will be transported to lunch at The Old Kempton Distillery.  One of the most unique whisky distilleries in the world to meet some of the distilling team behind the paddock-to-bottle Belgrove distillery. You’ll meet assistant-distiller Peter on site as he shows us where they grow the rye for harvest, Belgrove’s infamous malting machine and Peter Bignell’s self-built still. A genuine reminder that whisky has, and always will be, a product from the land. Afternoon nibbles, aperitifs, whiskies and liquors for tasting and purchase.

Arriving at Ratho Farm, Bothwell later that evening, a home-cooked dinner will be prepared by our host and property owner Greg Ramsay, who will share with us his vision for the property, the stories held within and its place in the Tasmanian whisky landscape while guests enjoy select whisky tastings followed by fortified wines on the veranda and the opportunity to purchase bottles.

Dinner on the Saturday will involve marvellous stories from Adam from Adam’s distillery. Sit back and relax as he talks you through (and tastes you through) the process of their whisky and how they came to be where they are today

Sunday lunchtime sees us depart for an adventure in Ouse, at Lawrenny Estate Distillery. Soak in the magic of the property, located on the stunning River Derwent. Following this, a distillers luncheon at the neighbouring Nant distillery will be held, with a full tour, tastings and a fabulous lunch. Later that day, the opportunity for a round of golf at Australia’s oldest golf course back at Ratho Farm, for those who like to combine a little golf with their whisky.

This is a unique opportunity afforded only to those embarking on the Ratho Farm Whisky Weekend, to get a rare insight into the goings on inside award winning Tasmanian distilleries.

Wildfest Festival in the Southern Highlands in October 2018
Each year Wildfest hosts an annual Festival in the Southern Highlands from Friday 5 October – Sunday 7 October.  This 3-day bush luxury bush camping experience, where attendees can immerse themselves in an action packed weekend of activities.  Your 3-day, 2 night package with a choice of two activities is $3,250 per person.
