The International 

The International Burger is a classic, reworked with the same discipline, sourcing and technique that define the menu.

At its centre, a 180g beef patty developed with O’Connor and Vic’s Meat. Aged Australian cheddar, American cheese, burger sauce and cognac-flambéed onions with green peppercorn.

Charles Bar

Their aged Wagyu cheeseburger is made with all the best ingredients from their perfectly cooked aged Wagyu beef patty, slices of melted emmental and comte cheese, onion and pickles, topped with mustard and tomato sauce and served on a brioche sesame seed bun. 

This Charles Bar lunch special includes our aged wagyu cheeseburger and your choice of house wine, beer or soft drink for $28pp.  

Available from Monday to Saturday, 12pm-6pm. Walk-ins welcome.

The Gidley

The Gidley Burger is a signature offering – a classic cheeseburger featuring premium Australian beef, American cheese, pickles, onion and their house burger sauce, served on a soft milk bun. Simple and deliberately understated, it is executed with precision and has become one of Sydney’s most sought-after burgers.

Notably, it was the only Australian burger to make the World’s 25 Best Burgers 2025 list, ranking No. 12 for the second consecutive year. A testament to its consistency and quality.

Available in both the lounge and main dining room.

Restaurant Hubert 

Hubert’s Normandy Burger is a refined take on the classic cheeseburger, featuring dry-aged beef, Gruyère cheese, dill pickles and their signature Hubert sauce, all served in a soft, lightly toasted bun.

Known for its rich, beef-forward flavour and careful balance of simplicity and indulgence, it has become a standout on the bar menu – best enjoyed within the restaurant’s atmospheric, French-inspired setting.

Clam Bar

Clam Bar’s Cheeseburger is a more indulgent, steakhouse-style take on the classic, centred around a 250g grass-fed beef patty that is rich, juicy and cooked to a blush pink. Layered with American cheese, pickles, onion and a sharp mustard sauce, and often finished with thick-cut bacon, it leans unapologetically generous in both size and flavour.

Served within the restaurant’s New York-inspired setting, it is a refined yet indulgent option.

Grill Americano 

Grill Americano’s Le Cheeseburger ‘à la Maison Bâtard’ brings a familiar favourite into a more polished setting, a classic cheeseburger built with a quality beef patty, melted cheese, pickles and a house sauce, all served in a soft bun alongside fries, as part of the bar menu and carried across from its Melbourne counterpart.

Straightforward and well executed, it offers a balanced, no-fuss option within the restaurant’s European-inspired space. Ideal for a relaxed lunch or an easy, early evening bite.

Eleven Barrack

Eleven Barrack’s burger is a more elevated take on a classic cheeseburger, built around a quality Wagyu beef patty for a richer, more full-bodied flavour. It is layered with melted cheese, pickles and a house sauce, all held within a soft, lightly toasted bun – keeping the format familiar while refining the ingredients.

Served as part of the bar menu, it leans into a simple, well-balanced build, letting the beef take centre stage while maintaining the restaurant’s polished, detail-driven approach.
